Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14.5 ounce) can coconut milk
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped

Directions

Step 1

Heat the oil in a large Skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Step 2

Add the garlic and ginger and cook for 1 minute.

Step 3

Add the curry powder, cumin, coriander, turmeric, garam masala, and cayenne pepper and cook for 1 minute.

Step 4

Add the tomatoes and coconut milk and bring to a simmer.

Step 5

Add the chicken and season with salt and pepper. Simmer for 15 minutes, or until the chicken is cooked through.

Step 6

Garnish with cilantro and serve.
